Review: St. Williams Fish Fry


Yes it is that time of year again! When all the Cincinnatian's gather underneath each church to enjoy a good old fish fry. During lent this is really the main event each Friday church's boast about their amazon fish fry offerings, trying to gather more than just the usual parishioners. They have music and local radio stations and celebrities stopping by to boost sales and hopefully raise money for the church. In fact for some churches this is a bigger money maker for them than their annual fund?! 

My hubs family attends St. Williams so this is where we usually end up each week. I guess I am bias when I say that their fish fry is the best. Yes we have tried others, and while I am not a big fried food anything girl I like St. Williams and that might be for one reason...they have crab cakes!!! I feel like all the fish fry's offer the same pretty basic items; fried anything fish, but this is the only crab cake in town. 



The kiddo shares the shrimp platter with her brothers and then she works the bake sale or helps deliver food. We are not members of this church but they welcome her help with open arms and she loves it, even makes a tip or two. 



If you have never attended one of Cincinnati's many fish fry's I highly recommend you do. You may not make it out to St. Williams on the west side but there are plenty to choose from around the city. Some you go for the food and others you go for the good company and a time to sit with the family and just relish in the season. Fried food may not be your thing, but like I have said before I love arbitrary rules (only eat fish on Fridays). It makes for a nice family tradition :)

Contridictions


 My husband brought it to my attention that when you read my blog that maybe you would think we are a super granola/hippie family that only drinks from glasses, never uses the microwave, recycles everything even our pee, and basically live off of sticks and berries. Reality check...that is no where near the case.
















We buy processed food, we have thrown away cardboard, my kids eat candy and stay up too late some nights, I buy premade items and I give into the chicken nugget craving. We are not the perfect family in any way shape or form. I don't think any family is. We are all just trying to make little changes in our life for the better.
















I know that eating fruits and veggies is good for us, so I do my best to serve good food around the house. But my husband and I both work 8-5 and neither of us is making millions so time and money is tight. We have to make accommodations where we can, shortcuts. The is sort of where the whole Juice Plus+ kick came from, it was an easy way to bridge the gap between what we SHOULD eat and what we DID eat. It also became a catalyst for me to start researching more about what we were putting into our bodies and learning about all the trendy words I was hearing in the news; GMOs, processed, antioxidants, blah, blah, blah OMG everything is killing us! For at least 24hrs I was sure that I was giving my whole family cancer because I made boxed mac & cheese for dinner and they ate hot dogs.

After the hubs talked me down off the mountain of worry, I went back to my favorite virtue; temperance. "Everything in moderation is good for you" So no that is not a direct quote from Mr. Ben Franklin but I like to think it was what he was getting at. It's ok that we are not perfect, it's ok that we eat badly sometimes...we just can't do it ALL the time. We needed to make changes and as you will read here we are slowly but surely doing that. Adding more variety to the fruits and vegetables we do eat and trying to cut out all the so called bad stuff and try some so called good/health stuff.


So I apologize for the long post and I hope the random pictures help make up for it, but I just wanted you to be aware that we eat like crap some days and I will contradict myself a hundred times before this blog is over. We are working on being better over here and I hope you are too, but it takes time.

Here's to pretending I am healthier then I really am and maybe it becoming a reality ;)

Green Chili Stew on Our Last Christmas


So we finally got to celebrate Christmas this past weekend and it was lovely! Like so much fun, laughing crying, opening presents, trashing the house, spilling wine, tons of dishes, smiles and hearts warmed enough for the whole year, FUN. It makes me think that my brothers and I don't get together often enough. I know we all get busy with our own lives and then our children's lives but my brothers live close enough that we should make more of a point to get together, at least once a month.

We exchanged gifts for the kids and we always do a name drawing for the adults. My one sister in law gets me every year (hard when there is only six of us) and always makes me cry with her gift. See above the plate she had made for me. She had my mother write out her secret oatmeal cookie recipe and then had it put on a big cookie plate. It is awesome! My mom has such distinctive handwriting that I knew it right away and started blubbering like a baby while everyone laughed at me for crying. I have turned into such a cry baby since bubbie (my 1st boy).

Oh well but onto the menu: Green Chili Stew, left over tamales, Mac & Cheese (Stouffers
brought by my SIL) and a Salad (brought by my other SIL). Now a side note on the stew, my brother recently had a bought with thyroid cancer. So he is on a low iodine diet which did influence parts of this recipe, but everyone said that it was my best batch yet!

 Green Chili Ingredients:

  • 2 whole pork tenderloin cubed
  • 2 cups Hatch Green chili diced (this is a special New Mexican chile but I have seen people sub out roasted plablanos mixed with jalapenos)
  • 1 whole white onion, diced
  • 2 baking potatoes, diced and skins removed (this is part of the low iodine diet)
  • 2 tbls Olive Oil
  • 3 tbls flour
  • 3 tbls ground coriander
  • 2 tbls dried oregano
  • 1 tsp salt and more to taste (look for the no iodine added)
  • 1 tbls whole coriander
  • Water or chicken stock to cover


Cube your meat, then cover with the flour, coriander, oregano and a tsp or so of salt. 



Resulting in this delicious meat, weird look. 
PS I do mine in a plastic bag. It's easier to clean and well, fun to shake up a bag of meat. Allows me to let the kids help too. Set this aside while you dice up the large onion. 


Here is a great tutorial on how to dice an onion! Take a minute and explore this site too if you need a brush up on anything cooking or just want to know how to break down a whole chicken. 
Throw the diced onions in the pot with the olive oil and just start to bring the temp up. Maybe 2-5 minutes. Then add your meat just to brown it, not cook it thru. Add your green chilies. Now I had to clean mine and dice them, but some companies have them pre diced and pre cleaned. Once all this is combined give it a good stir and add your water or chicken stock. I couldn't use chicken stock because of the iodine in the salt they use so I added two 32 oz containers of water (it will cook down a bunch, I would use less chicken stock like one box and then add water as needed). Also add your whole coriander now. You should end up with a big pot of this...



Bring it to a boil and then let this simmer for about two hours. Give her a taste and see if she needs more salt, water (I would not add more stock if I started with stock, watch your salt in take). Add your diced potatoes now and let this cook for one more hour. The longer this bad boy cooks the better it gets, but we usually go about three hours at the least.


Now please do not judge me on the above picture, or judge this delicious stew on it either. This is a horrible pic, well most of my pictures are. I use my iPhone and all the wrong angles. But mostly this time I totally forgot to take a picture and this small leftover bowl was all the was left at the end of the evening when I was cleaning up. I had to wrangle it out of my husbands hands before he heated it up for his midnight snack just so I could take this terrible picture. 

Just believe me, you will never be the same after this green chili stew!

30 Minute Pause

I am not a stay at home mom, not even close. In fact I joke that I would probably become an alcoholic if I was. This is not to say that being a stay at home mom is not an awesome decision for some people, or even being a stay at home dad at that! It's just not the right one for me. Soooo anyway where I am going with this is, I work full time. Which is a whole other box of frustration.

It is hard to work all day and then really only have from 530 till bedtime as quality time with your kids. Have to make the most/best of those 10,800 seconds. My kids vary a bit in ages so some are able to help more then others and some have things to do like homework so they can't be bothered to help (10, 4, 1yrs old) all of this can either make for a perfect tornado of ciaos. They can be very good at entertaining themselves though some nights. Giving mommy a brief hiatus from the shift of the stress at work to the stress of home life. My down time (if you can call it that) is cooking dinner; probably why they behave since they always seem to be STARVING. Side note: why do kids always use this exaggerated word, pick up four bites of food and then say they are SOOO full? hmmm

This night daddy wasn't going to be home so I just whipped together some healthy choices that I knew the kids would eat. Pickiness is prevalent at our house.


First I took the days frustrations out on three boneless skinless Amish chicken breasts. Smashed them up real good/thin! I like to do my bashing in a plastic bag is I can, so there are no guts splattering. 

Today we marinaded the chicken in Garlic Expressions; this is not organic and I am usually weary of products that say they are "100% natural" as this is not FDA controlled and pretty much anyone can use it. But that being said the ingredients are minimal mostly local and the only additive is xantham. Which if you read the article is the least of the bad, so the shiniest turd in the turd bucket. And it tastes yummy.

If you are wondering, yes I can make my own dressing and do often, but read above that working mom part we have to find the shortcuts where we can. 


Next I threw those bad boys on our indoor grilling pan for about 7 minutes the first side and 5 the second, at a low to medium heat. We cook with gas which can heat up very fast and burn if you aren't careful, just make sure the chicken is cooked through. While I was grilling the chicken I sliced up some green apples to the side and put on a pan of doctored up canned green beans (shame me if you would like, it was all I had on hand). I heat up a small fry pan with a pad of butter, put about a teaspoons of dried thyme and one pressed garlic clove. Let that heat up just to bring out the flavor then threw the drained can (squeezed of excess liquid) of green beans in the pan to "fry" till heated threw and finished them with a squeeze of lime. 


Tada! A delicious fast kid friendly meal; lightly seasoned grilled chicken, green beans and apple slices. 

The verdict was split, they ate what was on their plates and didn't complain so I will mark one on the win side. We really prefer fresh or frozen green beans but again this is what I had. My Kiddo (oldest 10yr daughter) actually liked the green beans and well everyone loved the chicken. Even if they don't eat all their vegetables at least I know they got their Juice Plus+ chewables, at least :)

Was this a fancy amazing meal...heck nah! Weekly meal planning is ideal but sometimes you have to go with the flow and this is what was on hand and quick to cook, less than 30 minutes. Being able to calm myself and prepare a healthy meal for my family is my happy place. (except when they hate what I cook but that will come later) This also allowed us plenty of time after to have a dance party. Where my bubba (4 yr old boy) proceeds to strip his shirt off like a Chippendale and the mister (1 yr old boy) bounced the night away. Maybe that is my happier place?

Eating to my Health

What did you eat for new years eve... do you have anything you traditionally eat?

For our family it is not New Years Eve instead it is MY birthday and for my birthday I like seafood!!!

My oldest always treats me with a delicious breakfast in bed, yummy Pillsbury grands cinnabon buns! (no they aren't homemade and filled with processed junk but my baby made them for me and some sweet scented Rainbow Loom bracelets)

For dessert I took my first crack and red velvet cupcakes with cream cheese icing...wait it gets better.

Perfectly seared scallops that even Gordon Ramsey couldn't yell at.


Grilled Oysters; shucked, parm/reggiano mix, fresh parsley and garlic butter. Get a good flame and they are perfect. 

This was a special surprise. We have a regular meat guy at Findlay market from Mackie Meats that we surprised with tamales and he surprised us with crab legs! This will be a new regular.


 Did you eat anything yummy? Create any new traditions? Maybe for breakfast next year I need to teach the oldest about the perfect waffle...?

Happy New Year! Resolutions...

Did you make any good resolutions this New Year? I made one that I am really excited about...work harder.

I know sounds totally mundane and not exciting at all. But for me this has a couple of different pieces.

  1. Work harder...around the house, keeping it clean, throwing things away and making it ready to sell/rent! (that's another long post)
  2. Work harder...at life with the kids, keeping the hubs happy and generally enjoying the time we have together.
  3. Work harder...at work, my normal job, my blog and my new adventure as a Juice Plus+ Consultant which leads me to my favorite part
  4. Work harder at being healthy and SHARING how I am staying healthy and happy, by blogging more and talking about Juice Plus+.
Last year we gave up processed foods for lent and were able to accomplish that for 40 long days. While we have let some processed foods back into our lives we have been able to learn to enjoy more and more healthy foods which makes everyone feel better. 

I have been taking Juice Plus + for about two years now, and I was a total skeptic in the beginning. Actually I still am, but if it aint broke don't fix it. I started taking the Juice+ and had just gotten pregnant with my third child. I was so sick with the first two that I prepared myself to be throwing up all over again, but for some reason that didn't happen, I felt great! Was it the Juice+, I don't know but I kept taking it anyway. 

Next I got my son on the Children's Health study so that he could receive FREE Juice+! My allergy, irritable boy went this fall without one allergy med. He did use his eye drops here and there but I didn't have to pump him full of meds! I am solo excited to see how spring goes this season when his allergies are in full effect. 

Lastly I have started my even more skeptically then me husband and daughter on the Juice+ train, no huge improvements quite yet, but flu season didn't seem to hit our house as horribly as it has in the past.

This could all be coincidences, I mean we have been eating healthier in general and part of eating healthy has been working out and taking care of ourselves. Everything has played a factor but like I said if it aint broke don't fix it. So we are on the Juice+ train and now I want my friends and family to see if some strange coincidence happen when they start taking Juice+

All of this goes together you see...Work harder at being healthier and everything starts to fall into place.

 Found out this morning that the hubs is surprising me with a much needed date night! We haven't gone out just the two of us alone really since Mister was born 5 long months ago. He arranged for his parents to watch the kids OVERNIGHT. It was a fabulous surprise this morning and gives me something fun to look forward to for the rest of the day :)

Bit of Bumbo Genius

We are the proud owners of the original Bumbo chair, not the newer one with the silly seat belt. Sorry I feel like that seat belt is a total cop out. The original seat was clearly made for children to sit in on the floor and if you did choose to sit your child on a raised surface it was your responsibility as a parent to watch them. I do feel quite bad that there were some bad parenting moments where some children were injured in these seats. But I do not feel that adding the unnecessary seat belt (the seat is already snug enough) really is saving these children from inattentive parents. If they fall now the chair is just going to fall with/on them. 


Bumbo Genius MomementBut let me step down from my soap box and give you my quick GENIUS moment. Mister loves his Bumbo seat, with or without the tray, but he is constantly dropping his toys on the ground (still working on using those little hands properly). But just add one of these clips to any toy and viola, instant toy catcher/holder!

Weekly Meal Planning

We had a wonderful weekend! I don't know how it happened but everyone got along and we had such a good time just hanging together as a family. We cooked breakfast together, played games, went to the gym. Can we say it was the lack of processed food in our bellies that helped? Hmmm...doubt it but it was a weekend filled with smiles.

Monday: Left overs, Pina is getting spacers in her teeth so she is on mushy food and I over cooked this weekend we have too much food in the house :)

Wednesday: Quinua, still searching for the right recipe and have some other sweet ideas in mind
Thursday: Chicken Tikka Masala
Friday: Fish Fry, this time Saint Mary's to support Pina's School
Saturday: Chicken Enchiladas, but does this mean I have to make my own tortillas?

Hope your weekend went well. Make the time to plan ahead this week, even if its only for one or two meals. I find if I at least have in mind what meals I know I can make, the rest falls in to place. I wont lie and say we stuck completely to the schedule I put forth last week but we made most of the meals and I was able to actually buy all the ingredients and food that we needed. Having the right ingredients allowed me to improvise. Eating real food isn't hard or more expensive it just takes a little more effort.

Valentines Day: Pop tarts and pie crusts

Treated the kids this morning to some delicious strawberry pop tarts! Had to substitute blackberry jelly for strawberry, but all in all very good. As Pina says, "Nutella Tarts are a homerun mom!" Thanks babe

I also took the time to make my own pie crust instead of using store bought (since we are processed free over here). One, why did no one tell me it was so easy to make pie crust? Two, why did no one tell me that it tastes a hundred times better?!

Here is How I Made Pie Crust (enough for one crust):

  • 1 cup all purpose flour (will try again with whole wheat next time)
  • 1/2 tsp salt
  • 1tsp sugar (no recipe called for this, but as Mary Poppings says "A spoonful of sugar...")
  • 6 tbls cold cubed butter
  • 1/4 cup cold water
Mix all the dry ingredients together in a bowl and add the butter. Now you could throw this all into a food processor and pulse into a yummy sand texture with rocks. Or, and I find this method easier, get your hands dirty and squeeze it all together. Squeeze, squeeze, squeeze! Once you have mixed the butter and dry ingredients into a coarse sand and then gradually add the cold water. I would start with half the water and then see if you need anymore. You want the batter to hold together but not be too sticky. Now you are done and have a delicious croissant like crust! Just roll it out nice and thin. Using a dusting of flour to keep it from sticking.

Tricks to rolling: 

Use a sandwich of wax paper or parchment and keep flipping your dough over as you roll. Flip, remove paper from both sides, roll, flip, remove paper from both sides, repeat until you have your desired thickness. For a more circular shape roll outwards from the center; top, side, other side, bottom.

Homemade Waffle Challenge

Why didn't the tops cook?
How do I replace Eggo waffles with Nutella for breakfast?!

Borrowing my mother in laws waffle maker and using this recipe to make my own. Batter is chilling in the fridge so I can wake up and make them in the morning :)

Also I am not making us give up peanut butter and Nutella. I am sure I could make them all myself at home and maybe we will give them a try, they seem simple enough. But I have to give myself a few staples to keep around so that I can continue to run this house. I will share my results in the morning...

The recipe was too thin or something? Just wasn't what we were looking for; will keep researching. I am looking for a waffle that is crisp on the outside but fluffy on the inside. How do I get that? Also while I think we like store bought buttermilk flavored items, in reality they tasted to...curdled? Pina complained that they needed more sugar or something to balance that "rotten milk" flavor (her quote). The kids did eat them and opted for using real maple syrup instead of store bought or the nutella (wanted to stay true to the Lenten promise, love them). Pina complained a bit as she doesn't love the flavor of maple syrup but melt in some butter with the syrup and she was sold! I mean really who doesn't like REAL maple syrup.


I will perfect waffles though before these 40 days are over!

Cause I wanna be Southern!

Fried Okra night at my house! A treat I usually reserve for ordering out as I always assume that frying is messy and time consuming. But luckily I was completely wrong.

 
I was at Findlay Market on my usual Tuesday peruse of the fresh veggies and I saw a little quart of okra; my eyes and memories just lit up. I could see myself as a kid popping the deliciously, crispy fried bites into my mouth and my mom smiling as I ate my "veggies". I grew up in the south west so fried treats always seemed to creep into meals. I remembered bowls of gumbo and stew that had cooked all day and thickened with the okra. I honestly could almost smell the oil frying and the soup…I was a bit blinded by the okra and ended up buying it all along with some terrible sweet corn from this vendor. But the horrible corn is another story…

 
So can I really make fried okra? How do you fry something? Do I need to buy a fryer? What kind of batter do you use? Is this going to be hard, cause if it is I am out!? Oh goodness the questions that came to mind, there were too many to count. So I did what every good American does these days and I scoured the internet in search of recipes and someone that knew what they were doing! I learned that Okra is a very good source of fiber and protein, two things everyone needs and made me want to eat more.  Food Network of course returns 35 different recipes and all the knowledge you could ever want, but for some reason a link from Google caught my eye…CrazyAuntPurl.com! And by goodness if her charm and "craziness" didn't win me over it was her easy step by step instructions with pictures of how to fry okra that did the trick. So I grabbed her recipe, gave it some tweaks and went for it. This is how I spent my evening:


"Southern" Fried Okra Recipe
• Okra: However much you like, cut the tops off and slice about ¼" to ½" thick
• Milk: I used Vitamin D milk because who has buttermilk on hand?
• Flour: I bypassed using flour, I think I honestly just forgot about it
• Cornmeal: Yellow cornmeal so I can make cornbread some day, duh
• Oil: Normal vegetable oil works just fine
• Big heavy-bottomed frying pan: I have a cast-iron skillet that works awesome but I am sure any shallow pan would work

 
Extras: Always salt and pepper your frying batter (the cornmeal) and taste it, a trick my mom taught me. I added some cayenne pepper to the batter as well to give it a kick!

 
Shake an Bake Okra
Make it: Take your cut okra and soak it in a shallow bowl with just enough milk to cover. I found the longer it soaked the more it started to look like I was making rice crispy treats. The sticky okra combined with the milk made a yucky looking paste as I stirred to cover this crazy vegetable. After it had thoroughly soaked I drained the milk out in a colander and tossed the okra into a Ziploc bag with the cornmeal, salt, pepper and cayenne. This part was fun for the whole family, Piña and my youngest niece had fun tossing the bag back and forth and shaking it to make sure every piece was covered. Surprisingly it all stuck quite well, and was not messy at all with the bag. While the kids were having fun I heated up the skillet with enough oil to cover the bottom of the pan. I then dumped all the okra into a now clean and dry colander to get rid of the excess cornmeal. Once the oil was hot enough (mom says to look for the swimming fish, I never understood that but you can always run a test to see if the oil sizzles up the sides. Remember you can always adjust your heat, I find I would rather go cooler to hotter.) I tossed the whole batch of breaded okra into the oil and let it fry away for about 5 minutes. Checked it for that golden brown doneness look and turned it to the other side for another 5 minute-ish bath (the "ish" is when you think it is done, could take 5 minutes to turn golden could take 2 minutes). Then a paper towel rest, sprinkle with a little more salt while still hot and viola you have fried okra! And I didn't even get burnt.

Results: Well Tiger has found his new favorite food, gobbling down these tasty morsels and gumming at them with his no teeth till they were sticky gooey messes in his mouth. My niece even popped them like popcorn making the yummy sounds of a child enjoying a brand new food, she is so like me sometimes. But Piña and her skepticism to anything foreign carefully licked at one, and decided she better leave them where they lie. So by all accounts a pretty decent success, not the results I was looking for as far as consumption from my picky eater? But me and my bottle of red wine loved every bite; and thought lovingly of memories past and now new memories to come.

Welcome to My World


Welcome to my world of blogging or what not. I am just your average working mom with little to no time on my hands. Rather then put what little time I do have to good use like volunteering or giving back to the community I am sitting here at my computer thinking about food and what I am going to cook tonight, so I decided to write it all down. Why not share my love for food and family?

Food is basically how I relate to life. I don't think there is any time or event that I don't say, "Well, what are we eating?" In fact my mom is supposed to be in town this week and the first thing I asked her was where she wanted to go for lunch. Food to me is life, love, delicious, nutritious, the best part of my day! I mean we need it to live of course, but there is so much more to it than that. The kitchen, in my house at least, is the center of family life…this is the place where conversations happen, homework is completed, family calendars are kept and yummy, delectable treats that make your soul sing are created. Ok I am rambling; I apologize in advance as I will do this a lot so…food very important, blogging about food important.

Why is food so imperative in my life? I think it all began when I was a baby. My mother owned and operated the Artichoke Café along historic route 66 in Albuquerque, New Mexico; a four star restaurant during her reign. It was here that I grew up sleeping on top of the fridge, breaking into the desserts to indulge in my favorite guilty pleasure (chocolate mousse with black olives, gross sounding I know but early on I learned the love of sweet and salty foods) and "riding" the giant vacuum cleaner at closing time. My mother was a self taught cook that really just happened into the restaurant business. Long story short, my dad's company needed a caterer, she offered to do it, was a huge success, got more and more jobs, bought a kitchen and decided to make a go for it. Viola a restaurant is born and a passion for food is instilled in the children that followed. As the youngest of three, we all learned to love GOOD food. You know your mother is a chef when you have to bring a snack in for school and your mother packs a cheese, caviar and fruit plate or perfectly styled tea sandwiches with homemade butter cookies, let's just say somehow my snack day came up more often than the other kids. And now as a wife and mother of two I have tried to pass on this enthusiasm for food to my children (Piña; the picky one and Tiger; my newest adventure) and husband ("whatever, it's just food"). It doesn't matter how bad my day is I always know I can come home make dinner and feel better about life in general. I don't need the "runners high" I just need a pan to cook with and something to throw in it.

With that I bring to you my LIFE:
  • I review restaurants: I work downtown so most of them will be here. I love anywhere I can walk to from my office. Restaurants with niches, new places and my ultimate goal is to find that perfect hole in the wall place that I can just keep going to over and over.
  • Share recipes: Some that I come up with and others that I find thru the internet, friends and family. Usually I end up combining about 4 different recipes to come up with one good one and if it's bad I will share that too so you don't make the same mistakes as me.
  • Ramblings about good things and bad and how it all comes back to food J
